I tried Portillo’s for the first time last night as it was my last night on a training assignment in Indy. The food was decent but the business model is terrible. 40k Sq foot location almost double the size of a Mission BBQ and only 2 of 50 tables occupied while I ate. Approx. 30 staff working to cook and trash food while they had less than ten cars come thru the drive thru. Loading up on puts
